[Adjust the meat filling] Add 1 teaspoon of salt, 2 grams, 1 teaspoon of sugar, 3 grams, a little crushed pepper, stir in one direction, and beat vigorously.

Add another egg and continue beating vigorously.

Pour in the water chestnuts and fried dough sticks, add 1 tablespoon of extremely fresh 8 grams, 1 tablespoon of starch 20 grams, and 2 chopped green onions.

Mix thoroughly with your hands (gloves can be worn).

[Fried Lion Head] Heat the oil to 60% heat, take a portion of a lion head, beat it back and forth with both hands to form a ball, put it into the oil pan, and fry until the skin is golden brown.

Remove and place on absorbent paper to control oil and set aside.

[Braised Braised Sauce] Pour 500 grams of water into the pot and bring to a boil, add 2 tablespoons of 20 grams of very fresh flavor, 1 teaspoon of 3 grams of salt, 1 tablespoon of 20 grams of sugar, a little cooking wine, 1-2 spring onions, 2 slices of ginger, and 2 star anise, and bring to a boil again over high heat.

[Stewed Lion Head] After the marinade is boiled, add the lion head. Use a spoon to turn the lion head over and pour the juice over it. Then cover the lid and simmer over medium-low heat for about 30 minutes (the specific time depends on your own firepower and the maturity of the fried lion head).

It's almost ready when the soup is thick. Use a spoon to turn the lion's head over and drizzle the marinade over it.

Take out the lion's head and put it on a plate. Turn the soup on high to reduce the juice.
