Homemade braised noodles
Overview
Braised noodles are made differently in different places. Authentic Henan home-cooked food requires only the most common ingredients and takes half an hour to prepare a satisfying plate of salty and delicious food.

Boil water in a basket, spread the thinnest wet noodles bought from the supermarket on the basket grate, and steam for 10 minutes. PS: Use a spoon to evenly sprinkle a small amount of cooking oil on the noodles to prevent clumping; after 5 minutes, use chopsticks to loosen the noodles to allow air circulation and prevent clumping

While steaming the noodles, prepare garlic, fresh meat, garlic sprouts, green beans, tomatoes and onions. PS: The ratio for four people is roughly: one whole garlic, half a catty of fresh meat, half a catty of garlic sprouts and green beans, one tomato, and half an onion

Pour in the oil and heat, add the garlic and fresh meat to the pan and stir-fry for 2 minutes, add soy sauce to color; continue stir-frying for 1-2 minutes, add garlic sprouts and green beans and stir-fry for 2 minutes PS: After the fresh meat is put into the pan, wait a few seconds before stir-frying to avoid sticking (I don’t like to use non-stick pans for healthy eating)

Heat water and simmer for 5 minutes, add chicken essence, pepper, allspice, then add tomatoes and stir-fry, then add onions, MSG and salt to taste. PS: Heating water can make the meat fresh and tender, and can also lock in food nutrients; boiling MSG and salt for too long will lose part of the umami and salty taste, and it is easy to consume more salt and MSG

Take the cooked marinade into a bowl and set aside

Add the steamed thin noodles, pour the marinade over the noodles 3-4 times, and stir evenly. PS: If you want to save trouble, you can just put it on the plate and eat it here, but mom has better tips, see the picture below.

After the noodles have absorbed the marinade, put it back in the basket and steam for 2-3 minutes. All the delicious food will be thoroughly absorbed into the ingredients. Pour it back into the wok and you're done!
