After taking it out of the pot, whether it is sprinkled with pepper, cumin powder, five-spice powder... or directly dipped in tomato sauce, sweet and spicy sauce, etc., it has its own flavor and is suitable for cooking and snacks.

Get the ingredients ready.

Wash the fish and cut it into pieces of suitable size with a diagonal knife, add cooking wine and salt.

Add chopped green onion and ginger slices.

Catch evenly and marinate for half an hour to remove the fishy smell.

Mix flour and starch evenly.

Add a little water to make a thicker batter. The batter can be drawn into lines with chopsticks.

Use chopsticks to stir evenly. (You can also add starch to the batter piece by piece, but this is faster)

Heat an appropriate amount of oil in the pan. When it is 60% hot, add the fish pieces wrapped in batter one by one.

Fry for about a minute or two until the fish pieces are about 80% cooked, then take them out.

Heat the oil in the pan until it is 8 minutes hot again, add the fried fish pieces and fry for a while until the surface is golden and crispy.
