Melt the butter at room temperature. Use a hand mixer to stir until smooth. No need to beat. If the butter sticks to the beater, just beat it hard a few times to make it slide into the bowl

Add powdered sugar to the bowl and mix until smooth and without lumps

Add almond flour to the bowl and stir until smooth and grain-free (the almond flour is made from fresh apricots I bought at the market and ground into powder in a food processor. If you like a grainy texture, you don’t need to beat it too much. The biscuits will have a different texture)

Add sifted low-gluten flour into the bowl and mix evenly with a flour scraper to form a dough as shown in the picture below

Wrap the dough with tin foil and refrigerate for 1 to 2 hours

Knead the dough into the pattern you like. You can use different biscuit molds~~ I like to roll it into a small ball like making glutinous rice balls with my hands, and then put it on the baking sheet and directly press it into a small round with my hands. It is convenient and beautiful. Sprinkle some sesame seeds on top to make it more fragrant~~

Preheat the oven at 150° for 5 minutes, then bake the upper and lower tubes at 150° for 20 minutes, turning once during this time, and the delicious biscuits are out of the oven
