It's just that the way to cook eggplant is a bit special, and you can count several ingredients and an extremely complicated cooking process in one go. I still remember that there is a famous dish called Fried Vegetable Sanding which also contains eggplant. The three pieces are diced eggplant, diced carrot and diced dried fragrant pepper. It can be seen that eggplant is indeed a dish with great potential. It can be used as a main or as a side dish, as a vulgar or elegant dish. In fact, eggplant is not only delicious but also has the most important effect of lowering cholesterol. It’s just that when frying, you often need to absorb a lot of fat to make it soft and fragrant. This method will not only not reduce blood lipids, but also consume too much fat. If you blanch it slightly with boiling water, the eggplants that have absorbed the water will no longer need to eat too much fat, and they can still be fried to have a soft and fragrant texture. Vegetarian sandwich is good, but the two big rations in my family are absolute carnivores, and they are completely meat-free, so there is no market for vegetarian sandwich on my family's dining table. So, I slightly improved it, replacing diced carrots with diced ham, and keeping the other items unchanged. Add diced dried fragrant seeds, chopped green onions and peanuts and chili oil... Stir-fry together in a pot. It is a combination of meat and vegetables, rich in color and nutritionally balanced, and it is also very delicious with rice.
