Chop half the duck into pieces and wash it several times with water. Put cold water into the pot, add a few slices of ginger and cook.

Prepare ginger slices, star anise, cinnamon, dried chili and other auxiliary ingredients.

Pour oil into a dry pan, heat it for about 5 minutes, and add ginger slices.

Pour in the water-controlled duck pieces, add star anise, cinnamon, cumin, Sichuan peppercorns, cooking wine, vinegar, dried chili pepper, dark soy sauce, salt, a small piece of rock sugar, and stir-fry. After about two or three minutes, add enough water to cover the duck (I forgot to take a picture of this step), bring to a boil. After boiling for a while, turn to low heat, reduce the juice, add chicken essence, oyster sauce, garlic heads, garlic leaves, and stir-fry a few times.

Taste the taste and see if the saltiness suits you. I didn't like duck before, but now I braise a plate almost every week. It's delicious.
