Spicy Celery Tofu
Overview
Adding celery to Mapo tofu turns it into spicy celery tofu with endless aftertaste. Celery and dried bean curd go well together, but I didn’t expect that it also goes well with tofu.

Prepare the raw materials and choose soft tofu.

Cut celery into sections, about three centimeters long.

Chop onions, ginger and garlic.

Cut tofu into cubes.

Heat oil in a pan, add onion, ginger, garlic, bean paste and pepper and stir-fry.

Pour in the celery and stir-fry quickly, then add the light soy sauce and sugar. Since the bean paste itself is salty, there is no need to add salt. If it has a strong taste, you can add a little more.

Add the tofu, cover the pot and cook over high heat for 15 minutes.

Add starch to thicken the sauce, collect the juice, and serve on a plate.
