I remembered the winter bamboo shoots and eggs they saw drying at a farmer's house, and decided to make the remaining ones into winter bamboo shoots and eggs. Winter bamboo shoots and eggs, this name is very interesting. I also learned this name at a farmer's house. They said that they choose smaller winter bamboo shoots. After drying, they will resemble eggs and taste very tender, so they are vividly called winter bamboo shoots and eggs. In fact, they are just dried winter bamboo shoots, but they are dried whole in the sun. The winter bamboo shoots and eggs made by myself do not have any additives. They are boiled and dried naturally, so they are safe to eat. Moreover, soaking winter bamboo shoots in eggs is not as easy as drying spring bamboo shoots, and the texture is much tenderer after soaking. By the way, let’s talk about the difference between winter bamboo shoots and spring bamboo shoots. Winter bamboo shoots are bamboo shoots that have not yet been unearthed. As you can see in the picture above, the bamboo joints have not yet grown, and only the bamboo joint marks can be faintly seen. Spring bamboo shoots are bamboo shoots dug in spring that have already been unearthed, and the bamboo joints have already grown. This picture is a picture of spring bamboo shoots taken last year. Comparing the two pictures makes it very clear.
