It looks unprepossessing, but tastes absolutely amazing. The addition of cranberries is a bonus. This old-fashioned bread is fermented three times and the process is complicated, but it is definitely worth trying.

Divide into 9 equal portions. Relax for 10 minutes.

Put the mold into the oven along with a cup of hot water, close the door and ferment for the last time for about 50 minutes, until doubled in size.
