Xylitol bean paste filling
Overview
A classmate of mine has diabetes, so naturally he cannot eat sugar. Moon cakes are a food that is high in sugar and oil. He is only greedy. He wants to eat it but dare not eat it. In order to let him taste delicious mooncakes, I specially made this xylitol-based bean paste filling for him. It is a sugar-free filling, and the sweetness brought by xylitol can also satisfy his appetite. In order to make this filling healthier and easier for diabetics to eat, I specially fry it in olive oil. In this way, even though the amount of oil is large, olive oil is relatively healthier. Give it to him, so that he who hasn't eaten mooncakes in several years can enjoy the atmosphere of the Mid-Autumn Festival.

Steps
-
Soak red adzuki beans in water for more than 6 hours until they can be easily pinched with your fingernails, and then boiled easily. I steamed it in a basket while steaming rice. After steaming for 25 minutes, the beans were very rotten. You can also boil it until tender, or press it in a pressure cooker for 10 minutes
-
Pour the red beans into the pot and crush them with a slotted spoon. If you don’t want to do it, put it in a food processor and smash it. You need to add some water when mixing in the food processor, otherwise it will be difficult to mix. I thought it was too difficult to fry because there was too much water, so I crushed it with a slotted spoon. You can ask a husband to do this strenuous work.
-
Put the crushed bean paste into the wok. Because the directly crushed bean paste is very dry, you can add xylitol directly
-
Using a non-stick pan makes it easier to fry and saves effort when frying. Xylitol is about the same sweetness as sugar. But I still cut the amount in half. Used 100 grams and stir-fried until xylitol melted.
-
Continue to stir-fry until the bean paste basically forms into a ball
-
Pour in the olive oil in 3 batches. Every time, fry until the oil is completely absorbed and then put it down again
-
After the oil is completely absorbed, add the cake flour. Adding cake flour will make the filling taste better
-
Stir-fry until the cake powder and bean paste are completely combined, and the oily sugar-free bean paste filling is ready.
