Ding Ding Cai

Overview

Because I miss the meals I had when I was a child, I relied on my imagination to make this dish. It actually tastes different and is very good

  3. Marinate the tenderloin with appropriate amount of starch and soy sauce

    Ding Ding Cai step 3
  4. Rinse the potato pieces with water, heat them in the microwave for 2-3 minutes, take them out and wash them once or twice with water (if you don’t have a microwave, you can soak them in water for a while)

    Ding Ding Cai step 4
  5. Add a little more oil to the pan and heat it to about 80% hot

    Ding Ding Cai step 5
  6. Put the drained potato pieces into the oil pan and fry until you can feel the outer skin of the potatoes is hard when turned over with a shovel

    Ding Ding Cai step 6
  7. After frying, turn off the heat. When the oil cools down a bit, drain the potato pieces and set aside

    Ding Ding Cai step 7
  8. The chopped celery is also heated in the microwave for about 2-3 minutes (you can also use water to boil it). The heated celery is soaked in water for a while (it can restore some moisture to the celery)

    Ding Ding Cai step 8
  9. Pour out most of the oil used to fry the potato pieces, leaving some base oil enough for cooking

    Ding Ding Cai step 9
  10. When the oil temperature is low, add the diced pork and stir-fry

    Ding Ding Cai step 10
  11. After the meat changes color, add the onion, ginger and garlic

  12. After stir-frying for a while, add the diced carrots and stir-fry

    Ding Ding Cai step 12
  13. After the diced carrots are evenly coated with oil, add the drained celery cubes

    Ding Ding Cai step 13
  14. After stir-frying the previous ingredients evenly, add the fried diced potatoes

    Ding Ding Cai step 14
  15. After stir-frying the ingredients evenly, add appropriate amount of soy sauce and stir-fry evenly, then add five-spice powder (if there is no five-spice powder, you can use Sichuan peppercorns or aniseed noodles instead), oyster sauce, chicken essence, appropriate amount of salt and stir-fry evenly (add the salt last, taste the saltiness before adding salt, add salt as needed)

    Ding Ding Cai step 15
  16. Stir-fry all the ingredients evenly (if there are sesame seeds, sprinkle some cooked white sesame seeds and stir-fry evenly)

    Ding Ding Cai step 16
  17. Take it out, put it on a plate

    Ding Ding Cai step 17
  18. Paired with a bowl of white rice, you can have a delicious meal
