Tomato and Egg Rice Noodles
Overview
My husband was on a business trip and was only at home with my daughter. I was too lazy to cook. I saw tomatoes and eggs in the refrigerator, so I decided to make tomato egg noodles. Anyway, my daughter likes to eat tomatoes. Wait, there is no noodles, only rice noodles, so I made do with it. It tastes good too!

All ingredients, including rice noodles, are soaked in water first. You don’t need to soak them for too long because they will be boiled in water later.

Boil the tomatoes in a pot and peel them.
