Home-style old hen soup (shredded pork noodles in chicken soup)
Overview
When I was a child, I lived in a rural area and my family was relatively poor. We ate mostly chickens, ducks and geese raised at home. In my memory, what I like most is the chicken soup made by my mother. Every time, my mother would leave me some chicken soup and chicken, and cook me chicken soup and shredded pork noodles for the next meal. Now I live a wealthy life. I feel I can never get the same taste as before. I tried making this chicken stew this time and it tasted pretty good. The only drawback is that although I bought laying hens, the taste is still different from the old hens I raised at home. In short, I think this chicken soup is quite good, haha!

Steps
-
Add an appropriate amount of water and put the whole chicken in (my soup pot is small, so I divided the chicken into five pieces) and then add pepper, star anise and other aniseed ingredients (it is best to put the aniseed into an ingredient box or a cloth bag, so that the soup will be clearer)
-
Then bring to a boil over high heat, then reduce to a simmer and simmer for about an hour and a half (old hens are fed at different times, and the stewing time is also different. I bought an old hen that has been raised for more than two years).

After an hour and a half, use chopsticks to insert into the chicken. If it feels easy to insert, it means the meat is cooked and ready to eat.
