Wash the purchased pig trotters clean and dirty.

Boil water in a pot, put the cleaned pig's trotters in and blanch them. You can add a little ginger and cooking wine to remove the fishy smell, or you can add them later in the pressure cooker step. After blanching, drain into cold water and set aside.

Chop the ginger and garlic into mince, add appropriate amount of salt and white vinegar that has not covered the ginger and garlic, which is rice vinegar, and marinate.

After stirring and marinating for a while, add an appropriate amount for a very fresh taste. After stirring, add a little rock sugar and continue marinating.

Put the pig's trotters into the pressure cooker and add salt. Because there is more water and pig's trotters, add more salt to give the pig's trotters a base flavor first. Add cooking wine, ginger slices, star anise, and green onion rolls to remove the fishy smell, and cook in the pressure cooker for about 25 minutes.

After pressing, deflate, remove and discard the ingredients such as ginger, green onion, star anise, and then put the pig's trotters into a bowl. Then scoop a few spoonfuls of the water from the pig's trotters into the sauce bowl and mix well. The sauce is complete.
