Medium-high gluten flour: ★You can also use 400G high-gluten flour, 50G low-gluten flour, or 50G whole-wheat flour.

Yeast: ★If you are making a low-sugar recipe, use low-sugar yeast. For high-sugar recipes, use high-sugar tolerant yeast.

The walnuts need to be toasted in advance and the large walnuts should be broken into pieces first. You can use the oven to bake or pan-fry, but I made the most of it and didn't have time to operate it, so I chose to use the roasting function of the bread machine. Pour in the walnuts and select the roasted seeds function. It takes about 15 to 20 minutes. Take out the big ones, it doesn't matter if some crumbs are left inside.

At this time, the inside of the bread machine is very hot. Open the lid to let the heat dissipate naturally. Because it is summer, the cooling will be slower. I put 2 ice bags inside, put it in the bread bucket and closed the lid for about 5 minutes and it was cool inside.

Remove the ice pack. Fill the fruit box with raisins and walnuts. Put the raisins first and then the walnuts so that the walnut bits won't fall off easily.

Put flour into the bread barrel, make a small hole in the middle to put the yeast, then cover it with flour. Use a rubber spatula to spread around the center to form grooves on all sides. Place the remaining material inside the groove.
