Vegetarian Fried Melon
Overview
Cold melon is also called bitter melon. Many people don’t like to eat it because of its bitter taste. Adding sugar to stir-fry it can reduce the bitterness a lot when making this dish. I used to make stir-fried meat or eggs, but now that vegetarian culture is popular, I made a vegetarian stir-fry to make it lighter.

Wash and slice the melon into slices, mince garlic, and set aside appropriate amount of black bean.

Heat the pan, add oil, add minced garlic and black bean paste and stir-fry until fragrant. Add in the melon and stir-fry until half cooked.

Stir-fry the melon until half-cooked, add salt and sugar to taste, add some water and simmer for 2-3 minutes, add an appropriate amount of oyster sauce and stir-fry evenly before serving.
