Potato Gourd Dough
Overview
Purple potatoes are oblong in shape with smaller bud eyes. The peel is black-purple, jet-black and shiny. The flesh is deep purple, beautiful in appearance and attractive in color. The pulp starch content is as high as 13-15%, with good taste and excellent quality.

Peel, wash and cut purple potatoes into cubes

Place in a steamer and steam until cooked
