Buy half a pig trotter and chop it.

Prepare ginger, green onions, rock sugar, and ginger.

For plums, choose dry and hard plums, which are available in supermarkets. Soak them in water for 3 hours in advance, then cut them with scissors. Do not pour away the water.

Prepare tomato sauce.

Add ginger, green onions and cooking wine to the water, pour the pork trotters and bring to a boil. Remove the pork trotters and set aside.

Heat oil in a pan and add rock sugar. Use a spatula to slowly stir and melt the rock sugar until it bubbles.

Burn until the rock sugar turns into numerous big bubbles.

Immediately pour the pork knuckles into the pot and stir-fry with a spatula to let it color. This step is called sugar-frying to make the color of the pig's trotters more beautiful.

Add the soaked plums and plum water.

Add salt, 2 tablespoons of tomato sauce, dark soy sauce, light soy sauce, green onion and ginger slices, add a little water, cover and simmer for a while, then put it in the electric pressure cooker and crush until mashed.
