  1. Buy half a pig trotter and chop it.

  3. For plums, choose dry and hard plums, which are available in supermarkets. Soak them in water for 3 hours in advance, then cut them with scissors. Do not pour away the water.

  5. Add ginger, green onions and cooking wine to the water, pour the pork trotters and bring to a boil. Remove the pork trotters and set aside.

  6. Heat oil in a pan and add rock sugar. Use a spatula to slowly stir and melt the rock sugar until it bubbles.
