Wash the white eggplants, remove the stems and cut them with an oblique blade. Immediately after cutting, soak them in light salt water to prevent them from turning black.

After frying for a while, the eggplant skin will wrinkle and change color. Add minced garlic and stir-fry evenly.

Add water, a little more at a time, and add oyster sauce, soy sauce, and salt according to taste. Stir well and cover with a lid. Don't turn it over when cooking over medium heat. This will make the fried eggplant soft but not rotten.
