Wash and peel the yellow peaches.

Peel the yellow peach and cut into pieces. (The size depends on personal preference. I cut it into small pieces, just one piece per spoon)

Put the sliced peaches into the pot and add rock sugar. (You can adjust the amount of sugar according to your preference)

Add appropriate amount of water.

Place the pot on the fire and bring the water to a boil over high heat.

Reduce heat to low and skim off any foam on the surface.

Squeeze in the lemon juice and continue to simmer.

Cook until the yellow peaches are transparent, then turn off the heat, let cool and then refrigerate. (The time for cooking peaches can be flexibly controlled according to your favorite taste)
