Wash Wuchang fish and dry it.

Cut the back of the fish 3-4 times for ease of flavor.

On medium heat, heat the pot, add oil and heat.

Fry both sides of the fish into turmeric. Be careful not to flip the fish when it is placed in the pot. Shake the pot slightly until the fish is fried and ready to be served.

Put onions, ginger, garlic, star anise, soy sauce, cooking wine, mature vinegar and sugar in the pot, and half a bowl of water.

Add the fish, dip both sides in the sauce, then cook over high heat for about 20 minutes, turning once halfway through.
