Such oysters are very fresh but are covered with sediment. When you buy them, you should choose oysters with a flat side and a concave shape, which will help them lose fat.

Fresh oysters are full of sand, so be sure to brush them clean with a small brush before steaming them in the pot.

You can take a closer look at the shapes of the oysters I chose. They are basically flat on one side and concave on the other, so the meat will be full. You can also try my method when you buy them again. Steam clean oysters in a pot of cold water. Boil the pot for 5 minutes and they will be cooked as soon as the oysters open. Do not steam them for too long. If they are steamed for a long time, the meat inside will shrink.

Add horseradish and vinegar to a bowl to make a dipping sauce. The dipping sauce with horseradish is very strong, so be sure to use less dipping sauce when eating, otherwise it will choke your nose.
