Overview

Making steamed buns has always been a tasteless thing for me, so I almost never make steamed buns, but steamed buns are often thrown out. My daughter said that the custard buns at the school gate were delicious and asked me if I could make them. So I searched online and found out that making custard buns... doesn't require kneading the dough and takes less time. This is how I will make buns from now on!

  1. First make the custard filling, (all ingredients A), mix eggs + sugar evenly.

  4. Add flour in 2 batches and mix well

  5. Add liquid unsalted butter and mix well (you can also use salad oil)

  6. Place in a steamer and steam over high heat

  7. Stir every 5 minutes and steam for a total of 20 minutes. Take it out when the custard filling is in a loose state

  8. After cooling, divide into small portions and fill with filling.

  9. Make the buns below: (all ingredients B). Take appropriate amount of warm water + yeast powder and mix well

  10. Add sugar and salt to one-third of the flour and mix well. Pour in warm water and yeast water and mix well

  13. No need to knead, cover with plastic wrap and leave in a warm place to ferment until doubled in size (it took me 20 minutes)

  14. When it has doubled in size, take out the dough and deflate it on a chopping board, then knead it until it is smooth

  16. Wrap in the custard filling, use the tiger's mouth to make a round shape, pull out the excess dough and discard it, and place the closing edge downwards

  18. Steam in a pot with cold water, bring to a boil over high heat, then turn to medium heat for 10 minutes, simmer for 5 minutes and then slowly remove the pot.
