Purchase new garlic and remove a few layers of skin.

Cut off a small section of garlic head.

Cut off a little of the roots under the garlic head after peeling off several layers of skin.

Put the processed garlic, sugar and vinegar into a pickling vessel. The vessel is a glass jar commonly used for making pickles in Sichuan. There is a bowl on top. After buckling, you can pour water on the side to seal it. Once fermentation is complete and the garlic skin turns dark brown, it’s ready to eat!
