Pleurotus eryngii is best to be thicker, one is enough, and two thinner ones

Wash and cut into strips, set aside

Cut peppers, carrots and onions into strips and set aside

Add salad oil, Pixian bean paste, and Sichuan peppercorns to the pot in sequence and stir-fry until fragrant. Add chopped carrots, onions, king oyster mushrooms, and green peppers and stir-fry. Add less salt (the bean paste is salty). When you see that the king oyster mushrooms are soft and a little soupy, add oyster sauce, turn off the heat, and serve on a plate!
