Prepare ingredients.

Cut the carrots and potatoes into shreds. Put the potatoes into clean water first, wash off the starch, and then take them out.

Take the white part of the green onion and cut it into sections.

Add appropriate amount of water to the pot and bring to a boil.

After the water boils, add shredded potatoes and carrots, blanch them for about 1-2 minutes, and chop them. (Don’t cook it for too long, otherwise it will become soft and not crispy)

Take out the blanched potatoes and shredded carrots, rinse them in ice water several times, drain the water, put them into a bowl, mix the white vinegar, sugar and salt well and set aside.

Heat the wok, add vegetable oil, when the oil is hot, add peppercorns and scallions.

Fry the peppercorns and scallions until brown, then turn off the heat and filter out the oil.
