Steps
-
Prepare ingredients
-
Add 10 grams of sugar and 2 grams of yeast to the water. Do not stir, let it absorb and dissolve naturally for 5 minutes (activating the yeast in advance can shorten the time for the dough to ferment later)
-
Leave a little of the egg liquid for brushing the surface of the bread
-
Activated yeast water
-
Add high-gluten flour to milk powder, the remaining white sugar, egg liquid and a little salt. Stir the yeast water evenly and pour it into the flour in batches
-
Just stir until it becomes cotton-like. (Each brand of flour absorbs water to a different extent. You should control the amount of water. Do not pour water in all at once. If it is not enough, add it little by little.)
-
Knead the dough for 10 minutes and add butter
-
Continue rubbing for about 10 minutes until the membrane can be stretched and not easily cracked
-
Cover and ferment for 40 minutes
-
Take it out and rub it gently to release the air, divide it into small portions, and divide the red bean paste into small pieces (when the red bean paste is rolled into a ball, you can put some flour on your hands to make it easier)
-
Flatten the dough and fill it with red bean paste
-
With the mouth facing down
-
Flatten and roll into an oval shape, don’t use too much force, be gentle and don’t break it
-
Use a sharp knife to mark out several lines
-
Roll up both ends and pinch tightly
-
Put the wrong side up and put some water on both ends to connect
-
Let it sit for 15 minutes and brush the surface with egg wash
-
Preheat the oven to 180 degrees and bake for about 20 minutes until the surface is colored
