Pea tip egg noodles
Overview
My wok was damaged and I had to replace it with a new one. It might be pig iron. The food I stir-fry often turns black due to iron oxidation. It was the same when I cooked pea tip and egg soup today. The soup was not clear at all and the color of the eggs was not beautiful. Fortunately, although the soup was not beautiful, it did not affect the taste.

Remove the old leaves from the tops of peas, wash them in water and set aside

Crack the eggs into a bowl, add a little salt and beat well. Set aside.

Heat oil in a wok, add egg liquid and stir-fry until cooked.

Bring a large bowl of water to a boil.

Add some pepper.

Add pea tips and cook until raw.

Add appropriate amount of salt and a little fresh vegetables and turn off the heat.

While making the soup, boil a pot of water, put in the noodles and cook, scoop the cooked noodles into a soup bowl, top with pea tip egg soup and serve.
