Overview

Soft tofu, also known as southern tofu, soft tofu. Generally refers to tofu with a high water content made with gypsum as a coagulant. It is characterized by a tender texture, elasticity, and a large water content. The general water content is 85%-90%, and the protein content is also high, above 5%. Boxed tofu and bagged tofu made with gluconolactone as coagulant also belong to the category of soft tofu. Because tofu tastes good and has high nutritional value! It has become a common ingredient in our home-cooked dishes. When I was stewing chicken legs, I suddenly thought that I could add some seasonings to the soup of the chicken legs to cook the tofu. It would be more delicious when paired with meat dishes!

  1. Cut the soft tofu into cubes, soak in hot water and place on a plate.

Prepare a bowl, add a small spoonful of dark soy sauce, two small spoons of light soy sauce, a small spoonful of rice vinegar, an appropriate amount of salt, sugar, chicken essence, sesame oil, minced garlic, then add a small amount of clear chicken soup and mix thoroughly, then heat the oil in the pot, add the Sichuan peppercorns, sauté the Sichuan peppercorns, remove the Sichuan peppercorns, and pour the oil into a mixing bowl and set aside.
