Mom’s hand-made noodles
Overview
In the past, my mother always liked to make us a steaming bowl of hand-made noodles in the morning. Today, I also made a bowl for my son. On such an early autumn morning, it’s great to have a bowl of hot soup and noodles.

Break an egg and start kneading the noodles.

Use chopsticks to stir into a fluffy consistency.

Knead the flour into a smooth dough using your hands. Wake up for about 10 minutes.

Place the rested dough on the chopping board and continue kneading it, then flatten it and prepare a large rolling pin to roll out the noodles.

Fold the thin rolled dough sheets as shown in the picture. You can put some cornmeal in the middle to prevent them from sticking.

Cut the dough into strips about 3 mm wide with a knife.

Shake out all the cut noodles.

Cut a tomato for soup.

Put it in the pan and fry it.

Add water, bring to a boil, add a piece of pork bone soup, then add noodles and continue cooking. Be careful to stir the noodles frequently with chopsticks to prevent them from sticking to the pot.
