Brush the Beibei pumpkin clean, put it into the steamer and steam it until it is easy to insert chopsticks.

The pulp made from the skin and flesh of Beibei pumpkin does not taste very good, so you need to remove the skin of the pumpkin, but do not throw it away, eat it. After peeling, put the pumpkin flesh, pumpkin seeds and a small amount of water into a breaking machine to make pumpkin pulp and set aside

Wash the soft tofu and straw mushrooms, cut the tofu into small pieces. After steaming the pumpkin, put the soft tofu into the steamer and steam for 3 minutes. Take it out, pour in the straw mushrooms and blanch the water for a few seconds, take them out, and then cut into small pieces.

Pour a little oil into the pot, add straw mushrooms and fry for a while, then add pumpkin pulp and cook for 2 minutes, then add sea salt. If the pumpkin pulp is too thin, cook until thickened and then turn off the heat.

Pour the cooked straw mushroom and pumpkin juice over the tofu and mix gently.
