Crispy kidney bean and red dates
Overview
I made some kidney bean and red date filling and didn’t use it up for making bread, so I used it to make this one-bite cake. The puff pastry is relatively simple to make. You don’t need to use mille-feuille pastry or whipped butter. You can just knead it directly with butter. It is a snack with almost no difficulty, and it is still crispy and delicious in the mouth. Personally, it tastes better than mille-feuille pastry. Haha, maybe it’s because I don’t particularly like puff pastry.

I made my own kidney bean and red date filling, I deliberately didn’t make it too crumbly, and the filling was a bit grainy

Remove the refrigerated butter from the refrigerator and add powdered sugar. The butter does not need to be softened.

Sift in flour

Knead it into a sandy state with your hands. The butter is not softened, but is directly kneaded with flour. This process of letting the flour wrap the butter actually acts as a shortening

Add the egg liquid into the kneaded flour

Gently knead the dough, don't over-knead it, so as not to affect the shortening. Wrap it in plastic wrap and let it rest for half an hour

Roll the dough into a rectangular piece with a thickness of about 3 mm, roll the filling into a long strip and place it on top

Roll up and wrap tightly

Cut into sections

Brush the surface with egg wash and sprinkle with sesame seeds

Preheat the oven to 170 degrees for 5 minutes, put it in the oven, put the second layer on the bottom, and bake for 20 minutes

Baked and crispy. The size I made was a bit big, so I couldn’t eat it in one bite. The heroic type is crispy in one bite, haha.
