Overview
The jam can be made according to the sweetness and sourness of the fruit. If the fruit is sour, add more sugar. If the fruit is sweet, add more lemon juice. Sugar and lemon can moderately increase the taste and preservative effect, and sugar can promote the precipitation of fruit pectin; there is also the water content of the fruit. If the fruit has enough water, add less or no water (pickling a fruit with sugar first can also release the water). You can also add some starch or maltose (pay attention to the sweetness) to increase the viscosity. For fruits with low water content, add a little water in moderation; but be sure to stir the whole process when cooking the fruit to prevent it from sticking to the pot. In addition, the pot for cooking fruits should not be made of iron, and the containers for storing jam should be sterilized at high temperatures to facilitate preservation. However, since the jam is homemade, no preservatives are added, so be careful not to store it for too long.
