Fried pickled cabbage
Overview
My girlfriend likes to eat sauerkraut, pickled beans and the like. She says it goes very well with rice. Every time I see her eating a big bowl, I feel very happy

Cut the fat meat into small pieces. Add salt, chicken essence, soy sauce and cooking wine to marinate the lean meat for half an hour. Shred the ginger, garlic and chili pepper and set aside

Cut the sauerkraut into shreds and soak in water for an hour

Soak the sauerkraut in water and squeeze it dry with your hands

Put a small amount of vegetable oil in a pot and slowly refine the fat over low heat until the meat is squeezed out. Remove the oil and discard it (it’s best if you have lard at home)

Add the marinated lean meat and stir-fry over high heat until it changes color

Stir-fry onion, ginger and chili until fragrant

Add the sauerkraut, then add the cooking wine, salt and light soy sauce, stir-fry over high heat for three minutes, and add an appropriate amount of chicken essence before serving
