Get the noodles ready.

Cut the green cabbage stalks into shreds, crack the eggs into a bowl, and cut the dried chilies into small pieces.

Boil water in a pot. When there are small bubbles in the water, add the noodles, break them up quickly, and cook for about 3 minutes (since this is fried noodles, you don’t need to overcook them).

Pour into cold water and set aside.

Heat oil in a pan until 70% hot.

Add the eggs and stir-fry quickly, then set aside.

Leave oil in the pot, add green cabbage stalks and dried chili peppers and stir-fry until cooked.

Add salt, chicken essence, oyster sauce and dark soy sauce to taste, add a little water and stir-fry evenly.

Add noodles.

Stir fry evenly.

Add eggs and stir quickly to combine.

Add green onions, stir-fry and remove from pan.
