Fish head and fish tail shredded tofu soup
Overview
The fish was not big, and it was a pity to discard the fish tails. It was just enough to make a pot and make soup.

Clean the fish heads and tails and drain the water

Appropriate amount of tofu skin

Pour oil into the pan. When it is 60% hot, add the fish head and tail and fry until brown on both sides

Pour in cooking wine, add scallions and ginger slices

Transfer the fish heads and tails to the soup pot, pour an appropriate amount of boiling water, cover and simmer over low heat for 15 minutes

Add the shredded tofu, add appropriate amount of salt, and cook for 5-10 minutes until the shredded tofu becomes soft

Before serving, sprinkle in appropriate amount of white pepper and coriander segments
