Then start preparing the marinade. One kilogram of meat should be mixed with about 150g of Xintai's special marinade. If you have a heavy taste, you can add more; add an appropriate amount of water, not too much, as long as the mixed marinade fully contacts the racks; stir the water and marinade evenly, immerse each rack in the marinade for full contact, then pour the marinade into a container containing the racks and marinate; marinate for 12 hours before frying.

Then prepare the starch, pour in an appropriate amount of dry starch, add the eggs and mix with the dry starch as evenly as possible, then pour in an appropriate amount of water and mix, it is better to make it thinner;

Next, start frying the large ribs. Preheat the oil in the fryer to 180°C in advance; immerse the marinated large ribs in the starch water so that the large ribs are fully in contact with the starch water, and then put it into the hot oil to fry; fry for about 6 to 8 minutes, then filter the oil and pick it up.
