  1. Prepare the ingredients eggs, preserved eggs and salted duck eggs for later use.

  2. Warm reminder: I cooked the preserved eggs first. The yolks of cooked preserved eggs are not easy to break, and the cooked food is also beautiful. Peel 2 preserved eggs and set aside. Separate the egg whites and yolks of 2 salted duck eggs and set aside. Leave 3 yolks for eggs. Mix the three egg whites, 1 whole egg and 2 salted duck egg whites, add a little salt, a little white pepper and a little olive oil, mix well and set aside. Remember to add less salt, because salted egg whites are salty!

  3. Mix 3 egg yolks with a little cold boiled water and set aside. The ratio of egg yolks to cold boiled water is 2:1. Cut the preserved egg and salted duck egg yolks into small cubes and set aside.

  4. Cut the reserved preserved eggs. Pour the diced salted duck eggs into the stirred reserved egg whites and stir gently to avoid breaking the preserved eggs. Pour the mixed egg liquid into the steamed egg plate. Try to find a thinner plate so that it is easier to cook. In order to facilitate taking it out after steaming, I used heat-resistant plastic wrap as the bottom.

  9. Remove from the pan and let cool. Lift the plastic wrap and steamed eggs directly with both hands and place them on the cutting board. Slice and serve.
