Homemade Bai Ji Mo
Overview
Baiji steamed buns. I have eaten them several times when I went to Xi'an. They were stuffed with braised pork and they were very delicious. After I came back, there were several shops selling roujiamo. A small bun with a bit of braised pork would cost more than 10 yuan. I thought I might as well make it myself. The most important thing about Roujiamo is the steamed bun. The delicious steamed bun is crispy on the outside and soft on the inside. Even if it is empty, it is very delicious. Once the steamed bun is cooked, everything will be delicious. The one I made is not authentic, but the taste is still very good.

Mix all ingredients together except lard, knead into a smooth dough, cover with plastic wrap and let rest at room temperature for half an hour.

Roll the dough into a long shape and flatten it.

Roll out into a rectangular sheet and brush with a layer of lard.

Roll up from left to right.

When the roll reaches 1/2, use a knife to cut into thin strips on the remaining dough sheet, and continue rolling so that the thin strips evenly wrap the dough.

Roll into strips and then shape into long strips.

Divide into 6 equal parts.

Hold one up and flatten it with the palm of your hand.

Use a rolling pin to shape into a bowl.

Heat the pan, add the cake base, cover and cook slowly over medium-low heat.

Fry until the center bulges and yellow spots appear on both sides. (You need to turn it several times in between)
