Overview

The last batch of loofahs harvested in late autumn in my mother’s courtyard were tender and small, just perfect for me to eat by myself. Using fermented bean curd juice to season it is very unique.

  1. Peel the loofah.

  2. Cut into hob pieces.

  3. Heat oil in a pan, add chopped green onions and stir-fry until fragrant.

  4. Add loofah pieces.

  5. Stir fry until the loofah changes color.

  6. Add fermented bean curd juice.

  7. Stir-fry until fragrant, add a little fresh chicken juice to taste and serve.
