Overview
Made according to Lao Yang's recipe, the phoenix tail was not cooked well enough and was not obvious. Although it doesn't look very good, the taste is still quite good, hehe!

Peel the shrimps, leaving the last section of the tail, cut the back to remove the shrimp lines, and clean them.

Marinate with salt, white pepper and cooking wine for 10 minutes.

Cut the cheese slices into strips, roll them into the shrimp body, and secure with toothpicks.

Pat a layer of dry starch and stick a layer of egg liquid.

Coat in bread crumbs and remove toothpicks.

Add another layer of egg wash, then coat with another layer of bread crumbs.

Heat 50% oil and fry until golden brown.
