Overview
Scallion oil noodles are a special traditional noodle dish and a very famous snack in Shanghai and Shandong. Stew thin scallions in oil until the scallions are yellow and fragrant and cook them into noodle toppings. Pour over the cooked thin noodles. They are delicious, smooth and delicious. During our trip to Shanghai and Hangzhou during the potato holiday, we fell in love with this simple and delicious scallion oil noodles. We tried making it and it felt no different from the authentic ones😊😊

Wash the scallions and use kitchen paper to remove the water. Remove the white part of the scallions, leaving only the green scallion leaves and cut into long sections.

Heat the oil in the pot over medium heat and add lard to dissolve. If you don't have lard, you can just replace it with an equal amount of cooking oil, but adding lard will make it more fragrant. Then change to low heat and pour the green onion leaves into the pot.

Fry over low heat until the green onion leaves are browned, stirring occasionally, about 10 minutes.

Mix the light soy sauce and sugar in a bowl, stir well, then pour it into the pot and cook until it bubbles, then turn off the heat.

While making the scallion oil, cook the noodles, cool them and drain them, put them into a bowl, scoop out two tablespoons of the scallion oil, mix the noodles evenly and serve. You can cut noodles, dry noodles, or roll noodles by hand. Just choose the noodles according to your preference, preferably thin noodles. I didn’t take pictures of this step. I believe everyone can cook noodles.

Picture of the finished product. Pour the remaining scallion oil into a clean container and save it. When you want to eat noodles, just cook the noodles and pour the scallion oil on it. It is very convenient to make in five minutes. It is very suitable for busy mornings. The amount in the recipe is enough to mix five bowls of noodles.
