Run the running water over the goose wings to wash away the blood and set aside. Mix Sichuan peppercorns and salt, put into a clean pot and stir-fry.

While hot, rub the salt and peppercorn mixture onto the goose wings. Rub in the flavor. Add green onions and continue kneading.

Sprinkle in cooking wine and sliced ginger. Marinate for more than 12 hours to fully absorb the flavor.

Boil water over high heat and add goose wings. Bring to a boil, reduce heat and simmer for half an hour.
