  1. Use a knife to score cross patterns on the top of the tomatoes, boil them in boiling water for one minute, take them out and let them cool to remove the skin.

  3. I used the thicker middle part of the pangasius for frying, so only the smaller parts of the head and tail were left and cut into small pieces.

  4. Add the chopped fish pieces to the cooking wine, salt and black pepper and marinate for 10 minutes.
