This kind of noodles is only made in my hometown in Hubei. I don’t know if friends from other places have this method.

In another pot, add shredded carrots, tomatoes, and bean sprouts and blanch until cooked

Put sweet potato flour and egg noodles into a bowl, add cooked bean sprouts, tomatoes, shredded carrots and an appropriate amount of water (soup is better), add seasonings: tomato sauce, soybean paste, light soy sauce, vinegar and other seasonings, mix well and start eating.
