Cut half of the purchased chicken into small pieces and rinse with clean water.

Pour the water into the pot, remove and wash off the scum, drain and set aside.

After frying the onions and ginger slices in oil, add the blanched chicken pieces and stir-fry evenly.

Add some cooking wine, light soy sauce, dark soy sauce, salt and sugar and stir well, then add an ingredient bag (star anise, cinnamon, bay leaves).

Add appropriate amount of warm water and bring to boil.

To save time, I poured it into an electric saucepan and simmered it.

Put the chestnut kernels into the pot and pour some water.

After the chicken pieces in the pot have simmered for half an hour, add the blanched chestnuts to the electric stew pot and simmer them together for about half an hour.

When the time is up, return the chestnut chicken in the electric stew pot to the wok over high heat to reduce the juice.

Cook until the soup begins to thicken and then turn off the heat.
