Overview

I believe many friends like to eat French fries, especially children. My brother loves it very much. I’ve read many bloggers’ methods of cooking it first and then freezing it in the refrigerator. I find it very troublesome, so I will share it with you below.

  1. Dry the pot first, add cooking oil and heat over medium heat.

  2. Take two potatoes, wash, peel and cut into strips. (1 and 2 can be interchanged)

  3. Cut the fries as evenly as possible. I'm not good at cutting, so I cut it like this.

  4. Cut the fries and the oil is almost hot. To be on the safe side, let’s try one out first. If you see a lot of bubbling around the fries, it means the oil is warm enough.

  5. Pour the fries into the oil pan and fry, turning occasionally to make the fries heat evenly.

  6. Fry until the blisters gradually reduce, the sides are slightly yellow, and the skin is slightly firm (which is what the saying goes: "stretchy skin"). Remove from the pot.

  7. Turn the heat to high and continue to heat the oil. Feel it on the surface of the pot with your hands. When you feel it is hot or smoking (that is the legendary 90% hot), pour the potato chips in and fry again. PS: This step is very important. It can remove the excess oil and prevent the fries from becoming soft.

  8. Fry again for about three minutes until golden brown and remove from the pan.
