Huadiao Braised Pork
Overview
Braised pork is made with pork belly as the main ingredient, using three layers of fat and lean meat (pork belly). Produced, fat and thin, salty and soft, it melts in your mouth. Wash the pork belly and cut into pieces (the size is up to your preference)

Prepare 1 bottle of Huadiao wine, appropriate amounts of light soy sauce and dark soy sauce

There is no need to add oil to the pot. Put the pork belly into the pot and stir-fry over low heat

Stir-fry the pork belly until both sides are slightly brown and an appropriate amount of fat comes out (if you feel it is too oily, you can scoop out the excess fat)

Pour in 1 bottle of Huadiao wine and add appropriate amounts of light soy sauce and dark soy sauce (dark soy sauce plays a role in color adjustment. Choose a saltier light soy sauce. If it is not salty enough, add some salt. This dish has a strong taste and is salty and umami)

Bring to the boil and cook for 2 or 3 minutes to evaporate some of the wine smell. Pour the wine into the pressure cooker and put it on steam for 12 minutes. Let it cool naturally (please adjust the time setting according to the pressure of your own pressure cooker)
