Stir-fried bacon with cauliflower

Prepare the ingredients.

Break the cauliflower into large florets first, soak them in light salt water for a while and wash them thoroughly, then break them into small florets (or cut them into small florets). Cut the bacon into thin slices, slice the garlic, and cut the onions and peppers into small sections.

Put the bacon into a pot with cold water and bring to a boil, then turn off the heat and soak for 5-10 minutes to drain out the water and set aside.

Heat the cold oil in the pan and stir-fry the bacon over medium-low heat. When the fat part of the bacon becomes transparent, add the onion, chili and garlic slices and stir-fry until fragrant.

Add the cauliflower and stir-fry over low heat for 2-3 minutes (the cauliflower will cook more slowly if it is not blanched, so be patient)

Add light soy sauce and sugar and continue to stir-fry until the cauliflower is cooked (you can cover the pot and simmer for half a minute to cook it faster), add chicken essence and stir-fry evenly.
