Yellow clam and kidney bean noodles
Overview
When you feel uncomfortable, there's nothing better than a bowl of hot noodle soup, which is both easy to digest and convenient to eat. Noodles can be cooked in many ways, and they can be paired with a variety of ingredients. The bowl of noodles I am going to cook today uses one of our local seafoods - yellow clams. The most famous yellow clam is Dandong yellow clam, which is also a must-try delicacy when visiting Dandong.

First put the yellow clams into clean water and spit out the sediment inside. Here is a little trick to help the clams spit out the sediment inside. The method is to put the clams into the clear water so that they are not covered with the clams, and then add a few drops of cooking oil in the basin. This way the clams can easily open their mouths and spit out the sediment inside, and they will not clap their teeth when eating. This should take more than 30 minutes.

Kidney beans are also called string beans. Remove the tendons on both sides of the beans, clean them, and cut them into thin pieces for later use. Do not cut them too thickly, as they are difficult to cook if they are too thick. If the string beans are not cooked well, they will be poisonous if eaten.
-
Put an appropriate amount of water into the pot, and put the yellow clams into it. Note that when cooking yellow clams, you need to put it in cold water and hot water to cook the yellow clams. The yellow clams will not open their mouths. You don’t need to add any seasonings to cook the yellow clams. The fresh flavor of the yellow clams is enough.
-
Don't cook the yellow clams for too long, otherwise they won't be chewable when cooked, and they won't be tender enough, and the taste won't be fresh. Usually, turn off the heat 1-2 minutes after boiling the pot, but don't open the lid. Use the residual heat to slowly open the clams' mouth, and then take them out after cooking. This time, it's more convenient to use the Zhenmi Lift Hot Pot. You can directly raise the cooked yellow clams and take out the yellow clam meat for later use.
-
Then use a spoon to pour the clam soup into a bowl. Be careful not to mix the soup when pouring it.
-
Cover the pot and boil it again, add a little salt, then put the noodles and beans into the pot and cook. Add water once in the middle of the pot until the noodles are no longer hard, that is, they are cooked.
-
Raise the Zhenmi Lifting Hot Pot to easily take out the noodles, put them into the bowl that previously contained the yellow clam soup, put the yellow clam meat on top, sprinkle with chopped green onion, and finally season with a little sesame oil.
